Menu, supply and production
- Every menu item costed with a target portion and selling price.
- Primary and backup suppliers confirmed.
- Storage capacity, shelf life and reorder points tested.
- Preparation sequence and peak-hour throughput rehearsed.

Sales and cash control

Run a realistic rehearsal
Simulate a peak period with real tickets: take orders, collect payment, prepare, hand over, restock and reconcile. Measure bottlenecks and correct the workflow before opening. A soft launch can reduce risk, but it should still follow all applicable licence and food-safety requirements.
