Separate one-off and recurring costs

One-off costs can include tender deposits, tenancy deposits, renovation, signage, exhaust or plumbing work, cooking equipment, refrigeration, smallwares, licences, training and initial inventory. Recurring costs can include rent, service and conservancy charges, table-cleaning charges, utilities, gas, ingredients, packaging, labour, payment services, maintenance and waste.

Budget for opening friction

Allow for professional servicing, replacement parts, delivery fees, minor works and delays between taking possession and reaching steady sales. Keep a contingency rather than allocating every dollar to fit-out. Requirements vary by stall and premises, so obtain written quotations and check what the tenancy already provides.

Model the break-even point

Calculate contribution per order: selling price minus ingredients, packaging and other variable costs. Divide total monthly fixed costs by that contribution to estimate the orders needed to break even. Then compare the required orders with your preparation speed, opening hours and plausible footfall.

Run at least three cases—conservative, expected and strong—and include a working-capital buffer for the conservative case.
